Bertolino Nicuzza Bianco Terre Siciliane is an intense white made from 100% Grillo. Grown on the Marsala side of the island of Sicily, the vineyards are influenced by the sea and bring a salty edge to the wine. Complex and lush with musky floral, dried yellow peach, tangerine rind, smoky herbs, and sea spray.
The Il Censo estate is outside of Palazzo Adriano and the vineyards are farmed organically and grapes are harvested manually, with harvest occurring usually in October. The grapes maintain contact with the skins for two to three weeks, the length of the maceration depending on the vintage; only indigenous yeasts are used during fermentation and no temperature controls are utilized. The wine is bottled without being fined or filtered. The wine characteristically has a rich, golden tint with a strong minerality and a pleasant bitterness and an almost saline quality.
