Not your typical rosé…
These 60+ year old vines are all grown on Schiste soils and then manual harvested early in the morning and immediately destemmed and pressed for fermentation in steel. Lengthy aging in 120year old foudres where a thin veil of floor is allowed to develop for some microxygenation. The result is a racy yet savory + complex rose. Iconic!
