NOT YOUR TYPICAL SAUVIGNON BLANC! This number gets an overnight soak on the skins followed by fermentation and 30 months of aging in neutral oak. A. bit umami upfront but then some fruit and apple skins come around. Nice tension between between acid, texture and body. Geek out on this solo or with a fatty fish!
